Lucinda Scala Quinn is the founder of Mad Hungry, the headquarters for home cooks looking for proven recipes, strategies, and inspiration. She is the author of four cookbooks, most recently Mad Hungry: Feeding Men & Boys and Mad Hungry Cravings, and appears regularly on both morning television and QVC with her top-selling Mad Hungry kitchenware line. Lucinda is the former senior vice president and executive editorial director of food and entertaining at Martha Stewart Living Omnimedia and the host of her own television show, Mad Hungry: Bringing Back the Family Meal, and she cohosted Everyday Food on PBS for six years. She lives and cooks with her husband and three sons in New York City.

Will Satisfy Your Every Craving

We've all been there. Craving a gooey, cheesy pizza on a Thursday night, until you finally give in and call the local pizza joint for delivery. Mad Hungry Cravings acknowledges that indulging your cravings is a perfectly reasonable thing to do. But going out to a restaurant or ordering take-out isn't the best way to do it.
Mad Hungry Cravings runs contrary to our conventional wisdom about fast food and take-out being fast and easy. Lucinda Scala Quinn asserts that you can make your favorite comfort foods at home, and they will be healthier, tastier, faster, and cheaper than getting the restaurant version. After a few minutes of perusing this cookbook, she'll have you convinced.
This cookbook begins with a section on Scala Quinn's basic philosophy about crave-able foods. Keeping fresh ingredients on hand is half the battle. Start simply. Plan ahead and strategize. Broaden your horizons. These simple gems of advice are oh-so-obvious, yet so challenging to put into action. The author makes you feel like this is really possible, and that basic changes in the way your household operates can facilitate healthier, cheaper eating. She also explains the essential ingredients that make it possible to whip up Latin, American, Mediterranean, and Asian dishes without making special trips to the store. One of my favorite things about this cookbook is its excellent layout. The design is fun, fresh, and modern, making the cookbook easy to read and very accessible. Recipes are laid out in a very natural fashion, with ingredients on the left and cooking instructions in a column to the right. Special notes, tips, and tricks appear at the bottom. This layout feels very organic and useable, making it simple to follow a recipe without getting lost in excessive text.
As for the recipes themselves, I tried four different dishes before writing the review. Each was spot-on. The Apple-Maple French Toast is a spectacular treat, sweet but not too sweet. It's perfect for a weekend brunch or special breakfast. The Spinach Phyllo Pie has fantastic flavor and amazing texture; the perfect blend of phyllo crust crunch and creamy spinach filling. The Fake-Out Flautas are as delicious as your local Mexican joint, but with a fraction of the fat. And the New York Cheesecake was absolutely creamy and divine. I'm looking forward to trying other recipes in the weeks to come (Shrimp Pad Thai is next).
Buyers should be aware that this cookbook emphasizes healthier versions of commonly craved foods, but that each recipe is not necessarily healthy. Recipes feature butter, full-fat milk, sugar, cheese, and other ingredients that may not be diet-friendly for some (however, it would be fairly straightforward to make basic substitutions to suit your dietary needs). Although the cookbook fulfills its stated purpose -- making homemade, cleaner versions of commonly craved foods -- those seeking a truly low-fat, low-calorie, low-sodium recipes may be disappointed. Personally, I use butter and full-fat ingredients in moderation, but this may not be an approach that works for everyone.
A note for vegetarians: many of the recipes in Mad Hungry Cravings include meat-centric dishes. It's hard to make a veggie-friendly Philly Cheesesteak or New York City Hotdog. However, many of the salads, appetizers, soups, and desserts are meatless, so this cookbook may still be worth the purchase.
Overall, I highly recommend Mad Hungry Cravings. The breadth and scope of recipes is excellent, and the dishes I have tried thus far have been flavorful, satisfying my cravings. I'll be returning to this cookbook many times in the upcoming years, when the hankering for take-out strikes. Enjoy!

Feels like much more than 173 recipes!

I was surprised to see on the cover of Mad Hungry Cravings that it has 173 recipes. It feels like so much more than that! There is a little bit of everything in this book! The book can be summed up in the Mad Hungry Maxims - how and why to cook the food you crave at home - focus on cooking at home instead of take-out.
The book begins with a look at the pantry, or as she calls it the larder. A lot of books begin like this, but this one is set up a bit differently. Your larder is divided into American, Asian, Mediterranean, and Latin. Under each category are the basic ingredients that you need to keep stocked.
The books starts with the breakfast section where I marked the following to try:
Double Pork Sausage (this is ingenious and I am ashamed that I hadn't thought of it before)
Asparagus and Spinach Frittata
Hash Brown Egg Topper

I have all of her cookbooks and have made many of her recipes on her blog and show as well. Nothing has ever failed or been a disappointment. What I really love about her style is she proves you can cook healthy meals from scratch even if you are a busy women in a chaotic house, or a college kid, bachelor or single person. Your family can eat meals that don't come from boxes or cans. You wont be disappointed. It's even an excellent book for teens and college kids to get into. She has recipes for foods we like to get from take out and shows you how to make it using the same amount of time it would take to go out and get it, being much healthier for our bodies and pocketbook. Give it a try you won't be disappointed.
